Day 3: I Met Rip!

The title of my blog of true...I DID meet Rip Esselstyn, the creator of the Engine 2 Diet tonight!

But, more about that later!

For breakfast I had homemade granola and unsweetened vanilla almond milk. And my E2 granola was fantastic!! I don't really know the measurements yet but it was old fashioned rolled oats, unsweetened applesauce, sliced almonds, raisins, cinnamon, vanilla extract and clementine juice. I baked it for about 30 minutes at 350. Delish!

               This stuff was so good!

I snacked on some of my quiona before lunch and then enjoyed the veggie sushi from Lisa for lunch!!! 


I drizzled a little liquid aminos on these and they were such a treat!! I also enjoyed a half wrap with Lisa's avocado/pea guacamole and leftover peppers and onions from the other day. Great cold!

Tonight was a very fun E2 meeting because Rip came!! I met him before it started and showed him my blog.

His presentation was fantastic!! I'll go into more detail about what he talked about in the upcoming days but one main thing he addressed is the 5 main diseases killing Americans. These are:

1. Heart Disease
2. Prostate Cancer
3. Breast Cancer
4. Type 2 Diabetes
5. Obesity

And these diseases can be prevented and oftentimes REVERSED with a plant based diet. His speech was powerful, but kinda stressed me out. It really made me aware of my risks, and the risks of my loved ones.

Powerful stuff though. And it doesn't have to be that hard! Oh, and he said we can have one glass of red wine....so that's awesome. :)

Like I said, I'll go into greater detail tomorrow. I'm coming down with a bad cold and some think it may be a reaction to my body detoxing. Either way, I feel congested and will rest! But not give in!

          Day 3: feeling a little slimmer!

Today I felt: Excited to meet Rip, congested, inspired to educate those around me

  2. I like your blog! I started on Feb. 3rd as well. Did Rip really say we can drink 1 glass of red wine????? That would be great!
