I've been thinking about my upcoming trip to Wisconsin and am wondering if my body will be able to handle all the cheat food I initially planned on eating. I figured, I'm only home for 4 nights, I'll just eat my favorite WI foods and not feel guilty. But, now I question how I'll physically feel instead of emotionally. It's been great not eating all that oil and stuff. I really feel better. I think I'll sample some favorites, but sharing things would be better than full meals, and making sure to eat my greens each day will help too.
Today was another predictable day: raisin bran for breakfast and enchiladas and garlicky kale salad for lunch. I snacked on a banana with almond butter too. I'm just about done with my enchiladas so I can make a new and exciting dish soon!
After work, I headed over hang out with my friend, Nathan. I needed someone to share my enchiladas with and he's vegan and a good friend, so good choice!
I'm so tired typing this. I can barely keep my eyes open. Work is wearing me out with our fundraising campaign. It's so awesome, but draining!! Enjoy pictures from our dinner party.
I thought that was a plate, but it's a decorative plate to go under the plates. Nathan laughed a lot. Oops!
And Nathan made the best avocado pudding! Loads better than my chia pudding!
Today I felt: sooooo tired!!! And glad to have a friend to eat vegan with!
