Speaking of work, I helped wrap roses today and boy oh boy were we busy! I left feeling so exhausted. On days like today, I'd typically tell myself that I deserve fast food or something easy like frozen pizza or a sub because I'm tired. But, not today! I came home and actually made dinner.
Like the title of my blog, today was leftover day. Raisin Bran again for breakfast, and leftover enchilada for lunch with a side of garlicky kale for lunch. And surprise, surprise, another E2 Poblano Black Bean Burger on a portabella cap topped with some E2 Traditional Hummus and my easy pickles for supper. I ate the burger with another side of baked sweet potato chips and garlicky kale salad.
And, finally, here are the ingredients for the Garlicky Kale Dreasing:
Tahini
Apple cider vinegar
Bragg's liquid aminos
Minced garlic
Nutritional Yeast
Lemon Juice
Water
Just mix this stuff up to suit your liking and ba da bing ba da boom!!!
