First of all, check this out! 13 days of progress and I can see and feel it!
And since today is Day 13, that means tomorrow is our halfway point! Not too bad!
I had the day off, so got some things done around the house, painted a little art project and also did a little food transformation! I froze the rest of the mushroom stroganoff sauce I made a week or so ago and wasn't sure if I wanted to eat that much pasta to use it up. So, I put it in a big pot on the stove and added some diced sweet potato and one container of 365 Organic Low Sodium Vegetable Broth and turned it into a soup! I puréed the sweet potatoes into the broth once they cooked to thicken it and added liquid aminos for a touch of saltiness.
I also ate up the rest of my cooked asparagus in a wrap, using my last E2 Sprouted Grains Tortilla and the last of the Roots Oil-Free Hummus that I added shallots, dill and garlic to! Yum!
Even though I was super productive at home, I STILL didn't get to the gym. Ugh! Why is it so hard for me?! I had to finish this video project but, I guess I should have planned harder. I'll try to get there a lot this coming week!
Tonight, I've been tired from an afternoon/evening of technical issues with my video project and once again found myself thinking "I'm tired, I'll just grab a sub or frozen pizza." Then I had to remember, I can't! It's cool that I've been virtually only eating what I've prepared over the last two weeks (aside from the Health Starts Here salads at work and my night at the Wild Cow), but it does take a lot planning. I didn't really plan my snacks out today, so I was kinda hungry. I guess I could have had an apple, but I wanted a cracker or something. I recently ran out of my E2 Crispbreads. Oh the humanity! But, any good diet or nutrition plan will inform you that there's a good deal of planning involved! And, planning is not that hard. I can make all sorts of wraps, salads and snacks in the same amount of time I'd be spending in the drive-thru line. It's just making sure you have the ingredients in the house!
Well, I finally peeled myself away from my computer problems and cooked dinner. I was really lacking energy, so made an easy dinner of Heather Jean's Hot Baked Tofu, sautéed portabella slices and baked onion rings!! I breaded onion rings with the same nutritional yeast mixture I put on my tofu and baked it for around 15 minutes at 425. They were really good!
And like you saw, I'm making progress in my progress photos! That's so exciting!
